1 lb. navy beans
1/2 t baking soda
1/2 lb. bacon, cut into 1-inch pieces
1 medium onion, chopped roughly
1/3 c brown sugar
1/3 c molasses
1 t dry mustard
1/4 c apple cider vinegar
1/2 t black pepper
3 c stock
2 bay leaves
1 t salt
- Soak beans overnight. In morning, preheat oven to 325.
- Fill 2 1/2 qt. Dutch oven halfway full with water. Add soda and boil. Add beans and allow to return to boil for 10 minutes. Drain beans and set aside.
- Place half the bacon into Dutch oven with onion. Add beans. Top with remaining pork. In a medium bowl, mix sugar, molasses, mustard, and S&P with stock. Pour over beans. Cover and bake 6 hours, adding additional water as needed to prevent the tops of beans from drying out.
- Serves 4–6
