Sweet Potato Fries

Ingredients

1–1 1/2 lbs. sweet potatoes

2 T olive oil

1/2 t kosher salt

1/2 t paprika

1/4 t cinnamon

  • Preheat oven to 425°. Line 2 baking sheets with aluminum foil.
  • Peel the sweet potatoes. Cut into strips that are about half an inch wide on each side.
  • Place the sweet potatoes into a large mixing bowl. Add oil, salt, paprika, and cinnamon. Stir to thoroughly coat the fries. Spread the fries out onto the baking sheets in a single layer.
  • Cook for 30 minutes, turning once, until slightly browned. Transfer immediately to a paper towel-lined plate and serve warm.
  • Serves 4
