Sausage Pilaf

This special recipe I got from my mother-in-law when I was first married and it has been a favorite of my family for years. It is a simple, easy meal that we all love.


1 lb. smoked sausage (optional as to amount)

1 small onion chopped

½ green pepper chopped

2 stalks small celery chopped

2 cans diced tomatoes

1 ½ cups of water (optional as to amount, see below)

1 cup white rice

Cook sausage in bite size pieces till puffed up, pour off grease and add onion, green pepper, celery, tomatoes, and rice. Cook according to rice directions. (Add your juice from tomatoes as part of the liquid you would use with your rice and whatever liquid that is still needed use water.) For example, I make my rice with one cup rice and two cups water. Drain the liquid from the tomatoes into the measuring cup and add enough water to make it two cups.
