1 1/2 # Brussels sprouts 3 T horseradish
3 carrots 3 T cider vinegar
1# parsnips 1 t dill
2 T butter ½ t salt
1/3 c veg oil Black pepper to taste
- Cut carrots & parsnips into 1” slices. Steam carrots, parsnips & Brussels sprouts together approximately 10 minutes or until just tender, but still firm.
- Melt butter in small saucepan. Remove from heat. Add oil, horseradish, & cider vinegar. Toss until all ingredients well combined. Toss with steamed vegetables in large bowl. Add dill, S&P to taste. Toss and enjoy!
