I got this one from my step-mom many years ago. And while I really don’t get the name Pretzel Salad (but that’s what it’s called), I fell in love with it as I love anything that is sweet and salty (basically I love food). This is a great dessert to take to a pot luck. It makes a lot and if you are like me you may eat it all yourself. Not good!
1 6-ounce package strawberry gelatin
2 cups boiling water
2 10-ounce packages frozen strawberries with juice, thawed
2 cups coarsely crushed pretzels
¾ cup butter or margarine, melted
3 Tbsp plus 1 cup sugar, divided
1 8-ounce package cream cheese, softened
1 8-ounce container frozen non-dairy whipped topping
Combine gelatin and boiling water, stirring until gelatin is dissolved. Stir in strawberries with juice. Chill until partially set. Combine cursed pretzels, melted butter and 3 tablespoons sugar. Pat into a 13”x9”x2” pan. Bake at 400o F for 8 minutes; cool completely. Cream together cream cheese and remaining 1 cup sugar; fold in whipped topping. Spread cream cheese mixture over pretzel crust. Pour partially set gelatin mixture over all; chill several hours or overnight. Serves 12.
