6 T rice vinegar 5 c sliced green cabbage
6 T veg oil 2 c sliced red cabbage
5 T peanut butter 1 red bell pepper- matchstick slices
3 T soy sauce 1 yellow bell pepper- matchstick slices
3 T brown sugar 2 med carrots, matchstick slices
2 t ginger, grated or 1 t ground 8 green onions, diced
3 cl minced garlic ½ c cilantro, chopped
- Whisk dressing ingredients together in a medium bowl until well-blended
- Combine remaining ingredients in large bowl & toss together well
- Add dressing to slaw and toss until everything is well-coated. Season with pepper to taste.
